Characteristics
There is good complexity and there is bad complexity. Algebra equations being the bad kind, Sheer is the good kind. At Elemental, we prefer to think of it as transparency through the complexity. Sheer is, indeed, a complex coffee. But the flavors, ohhh … the flavors, are so very discernable.
Current Bean
The coffee we currently use for Sheer is the Kenya Kasinga peaberry. It is from Machakos, Kenya just southeast of Nairobi. This coffee is loaded with bittersweet chocolate but also gives up molasses, spice and a lemon citrus note. With a big silky body, this coffee is great with milk (milk chocolate?!?!?). We love it in a press pot, pour over and a good quality drip machine.
