This single origin espresso comes from Finca Santa Sofia in El Salvador, which boasts Cup of Excellence fame. This washed bourdon is grown in the shade of inga trees at 1500 meters above sea level. The Vivagua mill sun-dries this coffee on brick patios for 11 days, after which it is hand-picked to remove any defective beans. Santa Sofia has a huge body and good chocolate and an ever changing diversity of high tones. There is no limit to the profiles this espresso will give up.
