There is good complexity and there is bad complexity. Algebra equations being the bad kind, Sheer blend is the good kind. At Elemental, we prefer to think of it as transparency through the complexity. Sheer is, indeed, a complex coffee. But the flavors, ohhh … the flavors, are so very discernable.
The coffee we currently use for Sheer is a high grown Kenyan AA from the Njuriga region. This coffee is a citrus bomb that delivers clearly transparent grapefruit and notes layered with chocolate and sugar cane syrup. It is roasted to Full City to bring out the body and develop some of the sweetness while still maintaining the effervescent citrus brightness. This coffee is spectacular with or without milk. We highly recommend this coffee for all brew methods except single orgin espresso.
Our previous Sheer bean was a high grown Kenyan AA from the Makwa region. This coffee is a citrus bomb that delivers clearly transparent grapefruit and black currant notes in a brown sugar and honey sweet envelope. It is roasted to Full City to bring out the body and develop some of the sweetness while still maintaining the effervescent citrus brightness. This coffee is spectacular with or without milk. We highly recommend this coffee in a French press but it will also shine as drip or in a vacuum brewer.
